Also on Wednesday {and Thursday too!} I will be creating a special menu for you at La Victoria Bakery. Here are some pics from last week.

1 cup Murmura
1/4 cup cubed ripe mango
1/8 cup minced green mango
1 Tablespoon diced onion
2 Tblespoons chopped cilantro
1/4 cup toasted cashew
1/8 cup crispy fried mung dal
1/8 cup sev
1/8 cup tamarind chutney
1/8 cup mint chutney
dash of chaat masala
juice of one lime
~combine all ingredients together to order.
Tamarind Chutney
1/3 C Tamarind seeds and stringy veins removed
1/2 C Pitted medjool dates
1 C Water
2 T Jaggery or Palm Sugar or Piloncillo
1 1/2 t Cumin seeds, toasted, crushed
1 t fennel seeds, toasted, crushed
Juice of 1/2 lime
1 cup of pomegranate juice cooked down to 1/4 cup
salt to taste
~chop the tamarinf and dates and simmer in the water with jaggery for 5 minutes. Strain into saucepan, add cumin and fennel and reduce to a nice thick consistancy over low heat. Add lime juice and salt to taste.

Mint Chutney
2 bunches of mint, chopped
1 bunch of cilantro, chopped
2 green chilies, chopped
1/2" ginger, minced
2 cloves garlic, minced
1 cup yogurt or almond milk for vegan version
juice of 1 lime
salt
~blend all ingredients together in a blender.
