How To Cool Off In Noriland


The best way to cool off at Chowpatty beach in Mumbai is at a gola stand or with a cup off kulfi. If you are a real king or a queen (raja or rani) you would cool off with a faluda royal
In San Francisco, cool off with a parfait at Citizen Cake.

For Falooda:
Pista Kulfi

8 cups whole milk
1/3 cup sugar
5 cardamom pods crushed
2 pinches of saffron strands
2 cups pistachios
1 Tablespoon cornstarch
~Dissolve the cornstarch in 2 tablespoons of cold water and set aside
~Reduce the milk with one pinch of saffron and the cardamom over low heat in a stainless steel pot until the milk measures 3 cups, stirring ocasionally.
~Strain milk and add the cornstarch slurry and sugar and mix well.
~Return the milk to the pot along with the pistachios and another pinch of saffron and simmer over medium heat, stirring constantly for another 2 minutes.
~Freeze overnight in Kulfi molds or in small muffin tins.

Falooda Sev (Rice Noodles)
1/4 cup cornstarch
1/4 cup rice flour
1 cup water
1 t salt
~Combine salt, cornstarch and rice flour and slowly wisk in room temperature water without forming any lumps.
~Boil the the cornstarch/ rice flour mixture on low heat until it becomes a translucent dough.
~Transfer the dough to a sev and form noodles by pressing by hand into ice water.

To serve
To unmold the kulfi, allow to sit at room temperature for 5 minutes and unmold with wooden skewer or fork.
Place falooda sev or vermicelli noodles in your favorite glass or bowl and top with pista kulfi.
Pour a few tablespoons of double heavy cream over the falooda.
Cover with Rooh Afza
Top with pistachios, cashew nuts, and plumped basil seeds, (sabja).
