Carnitas
4 pounds pork shoulder cut into big chunks, salted
1 quart pork fat manteca
1/2 cup Guiness stout
1/2 cup Mexican Coca Cola
1 small piece piloncillo, broken into tiny pieces
1 jalapeno cut in half, lengthwise
2 bay leaves
1 head of garlic cut in half
1 orange cut in half
2 onions cut in half
1 cup whole milk
1 stick cinnamon
Heat the manteca in a big pot until hot. Fry the pork over medium high heat until seared to golden brown. Lower the heat to medium low and fry for 45 minutes. Add the remaining ingredients and cook over low heat for at least another hour until tender.
Serve with fresh tortillas and a salsa made from tomatillo, jalapeno, cilantro, lime and avocado.

I'll put up another Birria recipe soon. I made carnitas and birria huaraches and tacos with 5 Soul Cocina salsas and Soul Cocina pickled carrots and jalapenos aka chiles en vinagre aka escabeche. I also cracked open cold young coconuts to beat the heat and fresh green grape juice and watermelon cactus pear juice.
